These Whole Wheat Apple Cinnamon Scones are sooo quick and easy to make and this year and at this time of year I am all about quick and easy recipes. There are a lot of buzz words this time of year…”veganuary”, “weight loss”, “new you” etc. I’m not interested in any of that.
Resolutions are all fine and good, but I’m over them. Let’s focus on the things that make us feel good and give us joy. Goodness knows these past few years have taught me to enjoy every moment that I can and you may be feeling the same way. I have enough pressures on me in the various areas of my life, I definitely do not need to put new ones on myself just because it’s a new year.
I’ll stick to what I know is good for me – faith, family, food, friends and fun forms of moving my body. Taking walks outside and dancing are my favourite ways to move. Nothing feels as good as a long walk or a vigorous dance session lol.
Why should you make these scones?
These scones are delicious! I used whole wheat flour because it adds a depth of flavour and a nuttiness that works really well with the apples and cinnamon – the fact that it also adds a bit of fibre is a side benefit lol! I love the combination of apples and cinnamon and it’s a pretty popular combo for the cold months of fall and winter.
Cinnamon is a warm spice and it feels good to bring a bit of warmth into our food during a chilly time. Apples are a very hearty fruit and are one of the only fruits that remain relatively inexpensive and plentiful in the stores during the winter months. They are also one of the only fruits that can hold up in a fridge for quite a while.
Apples are also one of my most favourite foods in the world…so there is that too 😉 I used gala apples for this recipe, but any sweet variety of apples will work fine. Steer clear of granny smith or other tart apples, because there is not much sugar in this recipe, so you really taste the natural flavour of the apples.
I added a maple glaze to my scones but you definitely don’t need to, they taste great on their own. Although, why not kick it up a notch, am I right? Anyway, the glaze could not be simpler, it is equal parts maple syrup and icing sugar. Is it sweet? Yes. However, the scones are not super sweet, so it pairs nicely.
This recipe is incredibly simple and very quick. You can easily whip these up for a weekend or weekday breakfast or an impromptu tea time with a neighbour. My favourite part about scones or scookies (my original scone/cookie creation) is that you use fridge temperature butter, so you do not have to wait for your butter to come up to room temperature. I don’t know why waiting for butter to warm up bothers me so much but it does. When I want to bake something I want to bake it now, not in two hours.
How to make these scrumptious snacks…
Anyway…you combine the dry ingredients and then cut in the cold butter using a fork or pastry blender. The pieces should be about the size of peas. Then you combine the wet ingredients and the apples. Next, you very gently combine the wet and dry. Make sure that you do not mix them too much or they will lose their crumbly texture.
You will want to toss them together using a fork until they are just combined. Then form a ball with the dough. Try not to touch it too much because the heat from our hands melts the butter. Pat it into a thick round disk and then slice it into six wedges. Place on a baking tray that has been covered with parchment paper or a silicone mat. Bake for 20 minutes and voila, yummy warm scones. When they have cooled a bit, you can add the glaze and enjoy 🙂

Whole Wheat Apple Cinnamon Scones
Ingredients
- ¼ cup brown sugar
- 1 tbsp baking powder
- 1 cup all purpose flour
- 1 cup whole wheat flour
- ¼ tsp salt
- 3 tsp cinnamon
- ¼ cup butter (cold)
- 1 egg (beaten)
- ¾ cup milk
- 1 cup chopped apple (1/4 inch chunks)
Optional Maple Glaze
- 3 tbsp maple syrup
- 3 tbsp powdered sugar
Instructions
- Preheat the oven to 425 F.
- Combine sugar, baking powder, both types of flour, salt, and cinnamon.
- Cut butter into large squares. Add cold butter to the dry ingredients and use a pastry blender or fork to break them apart into smaller pieces.
- In a separate bowl, beat the egg and then combine it with the milk and add the apple pieces.
- Add the wet ingredients to the dry ingredients and toss them together with a fork.
- Softly knead the dough a very small amount in order to make it into a ball. Pat down the top to make it flatter on top (into a thick disk). Make sure not to touch it too much. We do not want the butter to melt with the warmth from our hands.
- Use a knife or pastry cutter to cut the dough into 6 equal pieces.
- Bake for 15 – 20 minutes (until golden brown on top).
Optional Maple Glaze
- Combine the maple syrup and the powdered sugar with a small whisk. Drizzle onto cooled scones.
